Quinoa originates from the South American Andes, where it was grown up to 4,000 meters. For the Andean civilizations, it was the second most important crop after potatoes (and before corn). The Incas called her the “mother of all cereals,” and the Inca ruler was traditionally the first to sow the first new seeds each year. Due to its special properties, the American NASA counts on it as one of the basic foods for manned space flights. Quinoa is an excellent alternative to rice or couscous.
