From historical sources we can learn that the pharaohs already valued mushrooms as a delicacy, the ancient Greeks believed that mushrooms provided the power to fight, the ancient Romans viewed mushrooms as “food of the gods” and the ancient Chinese called mushrooms “the elixir of life” for their auspicious impact on human health.

One such fungus is shii-take (Lentinula edodes). The mushroom has above all a high nutritional value. It is an abundant and natural source of vitamin B1 (thiamine), B2 (riboflavin), B3 (niacin) and vitamin D. It also contains essential amino acids. Dried shii-take fruits are high in potassium, iron and phosphorus.

In addition to these substances, there are also substances that are not really important from a lay point of view, but from a medical point of view, these substances are the most valuable. In Japan, for example, Lentinan (shii-take extract) is used as a medicine. The second most important ingredient in shii-take is eritadenine.
