Black garlic is obtained through a process of cooking a clove of white garlic. Fresh garlic is cooked very slowly at low temperature, between 60 and 80 ° C for 25 to 30 days at a constant humidity of 80%. From this process results a dark vegetable with a dry peel and shiny charcoal-colored pods: black garlic.
