There is a link between long-term vitamin K deficiency and increased calcium storage in blood vessels. These are then less and less flexible until a serious problem can develop over time – the blood vessels must be flexible and able to contract and dilate due to proper blood flow. The most serious problem is either ischemic heart disease or peripheral artery disease, typically on the legs or feet.

Vitamin K and blood clotting
The properties of vitamin K are related to the activity of special types of proteins which, in combination with collagen fibers, produce blood clots – these prevent bleeding and form a so-called thrombus, a large blood clot that later turns into new tissue.

Vitamin K and insulin sensitivity
The less sensitive we are to the hormone insulin (which is flushed out after each consumption of mainly carbohydrates), the more we need it to maintain a stable blood glucose level. Decreasing insulin sensitivity may gradually lead to insulin resistance, which is a side effect of type 2 diabetes. The properties of vitamin K are related to the activity of special enzymes that inhibit the increase in insulin sensitivity.
