Pu Erh is a twice-fermented tea from the Chinese province of Yunnan. Its production is very mysterious and the length of the whole process varies. The selection of tea trees for Pu Erh is special, according to tea masters, the best red tea can be prepared only from old and wild bushes. The buds and 3-4 surrounding leaves are harvested.
